This Tokyo institution, Kanda Yabu Soba originally opened in 1880. I recently learned about via a design guidebook about Tokyo. It is located near Ochanomizu station in central Tokyo.
I ordered seiro style soba-firm noodles made from ten parts buckwheat flour to one part wheat flour (¥670) and tendane–crispy deep-fried shrimp on the side (¥1340). It was excellent quality food.
