Hana Wa Saku in Shin Nakano is a real find. I stumbled across the Tokyo Time Out review and thought I'd give it a try. I was fully intending to try their signature dish, the Gokujo Niku Udon ('The Best Meat Udon'), an ambitiously-named concoction topped with sukiyaki-style slices of premium A5 kuroge wagyu beef and a perfect egg yolk, plus some condiments. But got sidetracked by the Carbonara Udon, which came with a small salad. The smoked bacon complemented the chewy hand made noodles and carbonara sauce perfectly. The tempura looked amazing-I reckon this will become a regular spot since there are several dishes I still want to try-super high quality noodles and ingredients.
Update: I went back for the Gokujo Niku Udon ('The Best Meat Udon')-impressive.
